Phillipa Creasey has owned the 3 AA Star hotel since it opened in 1990 in the historic Bailgate area. In 1990 Phillipa’s father Jim Andrew, a local builder, applied for a change of use and the demolition of the garage to build The Tower Hotel and in August of that year it opened with Phillipa at the helm.

“There was no business when we opened and I spent the first 20 years getting to know how it should work and I think in the last eight we’ve been getting it about right,” said Phillipa modestly as The Tower is a firm favourite for many people who enjoy going out in Lincoln. Their restaurant, No.THIRTY8 is also a popular city eaterie, but the Tower team is never one to sit on its laurels, “Our focus this year has been to develop the restaurant side of the business and give it its own identity. “I find inspiration in classic flavour combinations and the seasonal produce we have available to us at the time of writing and preparing menus,” said Mike, who has gained the Tower their very impressive 2AA Rosette. “We always endeavour to use the best local produce available to us. With so many excellent producers in Lincolnshire and the surrounding counties, we’d be foolish not to take advantage.“I like to add twists and strive to be unique in my dishes whilst trying to remain familiar to the diners. None of our dishes are ‘out there’ but some may be thought-provoking. I encourage one constant ethos and that is to cook with accuracy and finesse."

Phillipa has continued to develop the site and rebuilt the conservatory to the rear of the bar area, which leads in to the old stableyard that is now the hotel’s garden, which is always a hit with locals and visitors in the summer. For hotel guests, The Tower has 15 individually designed boutique rooms, which are all ensuite and has Lincoln’s Roman and medieval history on its doorstep with the city centre just ten minutes away.
